MY CLUB WEEK 11

This week I thought it might be nice to have a recipe. The recipe to day will be fudgy chocolate cake.

 

 

INGREDIENTS:

FOR THE CAKE:

  • 225g plain flour
  • 350g caster sugar
  • 85g cocoa powder
  • 1½ tsp baking powder
  • 1½ tsp bicarbonate of soda
  • 2 free range eggs
  • 250 ml milk
  • 125 ml vegetable oil
  • 2 tsp vanilla extract
  • 250 ml boiling water

FOR THE CHOCOLATE ICING:

  • 200 g plain chocolate
  • 200ml double cream

 

 

METHOD:

  1. Preheat the oven to 180°C. Grease and line 2 20cm sandwich tins.
  2. Place all the cake ingredients apart from the boiling water in a large mixing bowl. Using a wooden spoon to beat the mixture until smooth.
  3. Add the boiling water in the mix, a little at a time, until smooth.
  4. Divide the cake batter between the 2 tins and bake in the oven for 25 – 35 minutes, or until  the top is firm to touch.
  5. Remove the cakes from the oven and allow to cool completely.
  6. Meanwhile, heat the chocolate and the cream in a saucepan over a low heat until the chocolate melts. Remove the pan from the heat and whisk the mix until smooth, glossy and thickened.
  7. Set aside to cool for 1 – 2 hours
  8. Carefully remove the cakes from the tin
  9. Spread a little chocolate icing on one of the cakes then carefully top with the other cake.
  10. Transfer to a serving plate and ice the cake all over with the chocolate icing, using a palette knife.

 

The cake is ready to serve 8 approximately.
