This week I thought it might be nice to have a recipe. The recipe to day will be fudgy chocolate cake.
INGREDIENTS:
FOR THE CAKE:
- 225g plain flour
- 350g caster sugar
- 85g cocoa powder
- 1½ tsp baking powder
- 1½ tsp bicarbonate of soda
- 2 free range eggs
- 250 ml milk
- 125 ml vegetable oil
- 2 tsp vanilla extract
- 250 ml boiling water
FOR THE CHOCOLATE ICING:
- 200 g plain chocolate
- 200ml double cream
METHOD:
- Preheat the oven to 180°C. Grease and line 2 20cm sandwich tins.
- Place all the cake ingredients apart from the boiling water in a large mixing bowl. Using a wooden spoon to beat the mixture until smooth.
- Add the boiling water in the mix, a little at a time, until smooth.
- Divide the cake batter between the 2 tins and bake in the oven for 25 – 35 minutes, or until the top is firm to touch.
- Remove the cakes from the oven and allow to cool completely.
- Meanwhile, heat the chocolate and the cream in a saucepan over a low heat until the chocolate melts. Remove the pan from the heat and whisk the mix until smooth, glossy and thickened.
- Set aside to cool for 1 – 2 hours
- Carefully remove the cakes from the tin
- Spread a little chocolate icing on one of the cakes then carefully top with the other cake.
- Transfer to a serving plate and ice the cake all over with the chocolate icing, using a palette knife.
The cake is ready to serve 8 approximately.
